This Christmas traybake is very quick and easy — much faster than making mince pies. The cooked streusel freezes very well — always serve warm with cream or brandy butter. Shopping list. For the mincemeat, place the currants, raisins, sultanas, cranberries, apricots, mixed peel, apple, butter, almonds, sugar, cinnamon, mixed spice, lemon zest and juice into a large pan and cook over a low heat, stirring occasionally for about 10 minutes. Remove from the heat, leave to cool, then stir in the brandy, rum or sherry. For the pastry, sift the flour and icing sugar into a mixing bowl and rub in the butter until the mixture resembles coarse breadcrumbs. Add just sufficient cold water to mix to a firm dough - if you prefer this can be made in a processor.

This is me!

It is my own recipe from an idea seen on a Mary Berry programme. Take the chilled sweet pastry and roll out to the size of the base of your tray bake pan. My pan was 20cm x 30cm. Carefully lay the pastry in the base of the pan, it should just cover the bottom and not go up the sides. You can always use small pieces that are spare to fill in any gaps. To make the steusel topping; into a large bowl add the flour and sugar. Add the butter cut into small chunks and rub with your finger tips until like fine breadcrumbs.

    By Gerard O'Donovan. Make your own mincemeat to get exactly the blend of fruits and spices you like; add dried apricot, cranberries or stewed apple to liven up flavour. To avoid a bitter ganache use chocolate with cocoa content of around 40 per cent; and keep the temperature low when melting or it will go granular. Mary Berry's Tunis cake with chocolate ganache is an alternative to heavy fruitcakes. If you get food colouring on your hands, lemon juice will usually get it off. 👩‍👩‍👦
