Great gf recipe. Made this topped with the cashew buttercream and although I found the flavour and texture a little off it was still super yummy. This is an amazingly close match to hers, without the gluten. The cake was fluffy and moist; not at all dense like many other gluten free recipes.Everyone in the family loved it. I will definitely be making this any time another carrot cake craving strikes! My daughter is extremely fussy and she and everyone else in my family loved it. I ended up cutting them into very thin slices, and baking them at for an additional 20 mins every time I wanted some - but even still the inside was gooey and the outside was burnt to a crisp.
